Chef Fernando Trancoso is a familiar name in the culinary scene of Colorado Springs, especially for food truck enthusiasts. He recently unveiled his new brick-and-mortar concept, Inefable, a Latin-flavored fine dining restaurant located in the upstairs space at downtown’s latest food hall Avenue 19.
Chef Trancoso is the man behind the favorite Mexican food truck, Tepex, which landed on our list of 20 Best Mexican Restaurants in Colorado Springs earlier this year. The food truck routinely rotated among stops on the Springs’ brewery scene, but Trancoso pulled the key from the ignition on Tepex one last time in November in order to jump-start Inefable.
Inefable offers a unique dining experience, fusing Mexican-focused flavors with Latin and French influence and Chef Trancoso’s signature touch. The menu will rotate seasonally and will also feature a wine list and craft cocktails.
Inefable opened Dec. 13 in the 60-seat space at Avenue 19. The anchor concept and atmosphere are not dissimilar to Ephemera at COATI, and the elevated cuisine makes an exciting addition to the downtown scene.
