Taco lovers are rejoicing. La’au’s is back! We know we are. The “Inspired by Hawaii, Made in Colorado” was one of our picks when we hit the taco trail to find the top tacos in Colorado Springs. After closing in January 2023, the local favorite taco shop recently reopened in The Well food hall, bringing back the same much-loved, island-inspired flavors. So what better way to celebrate than a luau?
La’au’s will host its grand re-opening “Leap Year Luau” on Thursday, March 7 from 4 p.m. to 9 p.m. La’au’s is known for its fresh flavors and ingredients like grilled mahi-mahi, braised pork, fresh mango salsa and green papaya slaw.
Taking advantage of the extra day that falls this year, La’au’s is bringing another reason to party and to help out a great cause — The Maui Strong Fund — which provides financial resources to support the immediate and long-term recovery needs for the people and places affected by the devastating Maui wildfires that took place in August 2023. On March 7, 10% of La’au’s sales will be donated to the Maui Strong Fund.

In addition, La’au’s will offer $2 salsa and endless chips, will give away three certificates for Free Tacos for a Year (one order of tacos per month for one year, valued at $120 each) and will give a lei to all guests, just to say mahalo. The Well will amplify the luau vibes with decorations, tropical drink specials at Gift Horse Bar, live music from DJ Joe Slivik, Well Gift Card giveaways and more.
“We are excited to support the Leap Day Luau by providing a fun tropical escape, while benefitting an aligning cause that is still very much in need. It’s the perfect way to enjoy the extra day we get this year,” says Justin Anderson, operating partner at The Well.
La’au’s closed its location near the Colorado Campus College in January 2023. Owner Joseph Coleman was waiting for the right time and place to bring it back. In December 2023 The Well approached Coleman about bringing one or more Blue Star Group restaurant concepts to the community gathering place, and he knew this was the perfect relationship and opportunity to bring La’au’s back.
“We’re excited to bring one of our tried-and-true restaurant concepts to The Well, and I am confident that the new energy of the space and partnership with The Well’s team will make La’au’s even more successful than it was before,” Coleman says. “But ultimately the Blue Star Group chose to come to The Well because we share a fundamental vision centered around fostering and nurturing community in diverse ways, and we want to continue to see this vision flourish in Colorado Springs.”
The fun won’t end after the Leap Day Luau. In March, the Blue Star Group will also unveil a brand new addition to The Well in the stall previously run by Opus (formerly known as Shovel Ready). The launch is slated for mid-to-late March and will add a new option to the culinary lineup at The Well.
Ultimately, the continued collaboration between The Well and Blue Star Group will enhance the common goal of making the Colorado Springs community a better place to be, eat and drink, all while giving back to the community.
