New 707 Pizza Co to Open at CC Robson Arena

Inspired by California Wine Country, the new Neapolitan pizzeria will open at Colorado College’s Robson Arena this spring.

Since the Ed Robson Arena opened at Colorado College in 2021, there has been an empty retail space facing N. Tejon Street just waiting for a restaurant. Finally that restaurant is on it’s way. Expected to open this spring, the new 707 Pizza Co. will offer Neapolitan style pizza, pasta, sandwiches, salads and a full bar. 

The pizzeria’s name is a nod to California’s Sonoma County Wine Country where the owners lived for 20 years (707 is the area code that includes the wine-making Napa, Sonoma, Lake and Mendocino counties). “707 Pizza Co. will be Wine Country-inspired, featuring fresh, high-quality ingredients and a California flair,” says Kristina Bradley who co-owns the restaurant with her son Executive Chef Kevyn Bradley.

She grew up in Cañon City. He was born in Colorado Springs. After living in Northern California for 20 years, the family returned to Colorado to care for her aging parents. They also opened the Penrose Pizzeria & Pub five years ago in Penrose, Colorado. Kevyn has worked in restaurants since he was 16, including the Penrose Pizzeria. “He has always wanted to open his own restaurant,” Kristina says. “We just thought it would happen much later in life.” 

But the timing was right for the mother and 32-year-old son to open a new concept in the Springs, especially after falling in love with the Ed Robson Arena space. “We wanted to move to a more urban environment, and something drew us to the North End of downtown Colorado Springs,” Kristina says. “It felt right, and the space is awesome.”

The sister restaurants will share some menu similarities, Kristina says, but 707 Pizza Co. will be a more elevated concept. In California, she worked in the wine industry, and you can expect to find featured wine bottles from Ehret Family Winery, owned by friends.

 With seating for 118, the modern interior will be enhanced by a two-story ceiling and a mezzanine level. Two large garage doors will open onto Tejon Street, and Kristina says they expect to add outdoor patio seating eventually, though probably not by the grand opening.

One unique feature at 707 Pizza will be its interactive tables, which are essentially large screens. Diners will browse menus and place orders on-screen at their leisure. “You can also play games, draw pictures, color, do puzzles,” Kristina says. “You can even interact with other guests or order food or drinks to another table if you want to.” 

Games can be full screen or by smaller, multiple individual size. Kristina says she and Kevyn stumbled on the interactive tables online and were drawn to their efficiency, ability to reduce labor costs and their uniqueness. “We should go check these out,” they said. At the time, the closest smart-tables were in Barcelona, Spain, so they made the journey in the name of research.

The new 707 Pizza Co. is completely separate from Robson Arena’s ice rink, but the restaurant will be in a prime location for CC hockey games. Kristina says they expect to stay open late for home games. CC students will be able to use their Gold Card at 707 to debit from their meal plan accounts. But Kristina says they hope to serve the broader Colorado Springs community as well. With another nod to a Wine Country favorite, 707 Pizza will include a community table, giving people a chance to meet and connect with new friends. 

Construction is currently underway, and the Bradleys hope to be able to open by April 2025. You’ll be able to find 707 Pizza Co. at 819 N. Tejon Street, Suite 120. A website is still in the works, but you can find them on Instagram @707pizzaco.
