The brewery and food truck announce an exclusive partnership, ensuring a consistent, elevated dining experience at the Westside brewery.

If you’ve been to the Westside WestFax Springs Brewery lately — we see you Bills fans — you know that Prime Kitchen food truck has had a permanent parking spot. Late last year, the brewery announced a partnership making Prime Kitchen the exclusive food truck at WestFax Springs and the brewery its permanent home moving forward. 

Owned and operated by Chef Michael Swartz, Prime Kitchen brings over 60 years of combined culinary experience, crafting gourmet burgers, hand-cut fries, nuggets, melts and comfort-food favorites made with real care and serious flavor. Passion shows in the food truck’s many elevated specials, such as a Seared Yellowfin Tuna Burger with ponzu slaw, fried onions, spicy mayonnaise and eel sauce. Or Smoke Prime Rib Sandwiches. Or Centennial Angus Flat Iron Steak Frites with chimichurri.

The rotation menu is designed to pair with WestFax Springs craft beers, chill atmosphere. and mountain-town vibes. And the partnership provides a consistent, high quality dining and drinking experience. 

The Denver-based WestFax Brewing opened its Colorado Springs location in 2024 between Old Colorado City and Manitou Springs, near Red Rock Canyon Open Space.
