Roth’s Sea and Steak to Open This Fall at Ford Amphitheater

The new fine-dining restaurant is scheduled to open this fall, promising five-star cuisine with a side of main-stage views and headliner-level hospitality.

There’s a new fine dining restaurant scheduled to open this fall in north Colorado Springs. From the very beginning, Venu founder, chairman and CEO J.W. Roth has dreamed of a world-class restaurant as part of the luxurious experience of his Ford Amphitheater. Now the signature Roth’s Sea and Steak is targeting a November opening, offering “a catch beyond, a cut above.” 

Perched at the back of Ford Amphitheater, Roth’s Sea and Steak promises mountain views, an outstanding vantage point over the stage, a five-star-worthy menu and impeccable service. Roth’s is designed both to blend with the music venue experience and to operate year-round as a sophisticated standalone destination regardless of the concert calendar.

As evidenced by Ford Amphitheater and Venu’s business plan to build similar luxury concert venues around the country, Roth dreams big. The new restaurant has been envisioned as “a heartfelt tribute to the Roth family’s passion for exceptional cuisine, vibrant community and magnetic hospitality,” according to a press release. And the operation is aiming for unmatched service and attention to detail, a globally trained team and a menu grounded in craftsmanship and creativity.

The menu will feature a lineup of dishes that draw on global inspiration and a spirit of luxury, including a Tomahawk Steak, A5 Wagyu Tartare, the Mediterranean-inspired Sea Bass with Romesco, Whole Roasted Turbot with a carved tableside presentation, Veal Wellington and the signature Potatoes from Heaven. Overall the menu is designed to evolve throughout the year and showcase premium cuts, fresh seafood and seasonal ingredients of the highest quality.

The beverage program at Roth’s Sea and Steak will feature an innovative cocktail menu rooted in timeless classics, crafted with artisanal spirits and a strong emphasis on rare, aged whiskeys such as Pappy Van Winkle, The Macallan and The Dalmore. Erens leads the curation of the wine list, focusing on renowned wine-growing regions and a special emphasis on family-owned estates and small producers who prioritize respect for the environment and terroir. A unique Napa Valley Blend will be offered as the debut offering in the exclusive Roth’s Cellar Selection – The Founders Cut wine series. The beer selection will highlight standout Colorado craft breweries.

Shaping the menus and leading the team are Executive Chef Ricky Biswas and General Manager Jeroen Erens, who both bring experience at Michelin-starred restaurants during their 15-plus years in fine dining. Biswas trained under Franck Putelat at the at the two-Michelin-starred La Table de Franck Putelat. (Putelat has won both the Meilleur Ouvrier de France and the Bocuse d’Or, considered two of the most prestigious awards in France and the world, respectively.) Venu reports that Biswas also spent formative stages at other Michelin-starred restaurants The French Laundry, Coi and PRESS. Most recently, Biswas has served in leadership roles at luxury Colorado resorts Brush Creek Ranch and Devil’s Thumb Ranch Resort and Spa.

Erens is a Netherlands native who will guide the beverage program. He has served as export director for Austria’s Domäne Wachau, one of Europe’s premier white wine producers, and held leadership roles at Michelin-starred restaurants, according to Venu. Most recently, he was food and beverage director at the Country Club at Castle Pines.

Those wanting to pair their elevated dining experience with a concert will find seating throughout the restaurant offering excellent views of both the Ford Amphitheater stage and Colorado’s Front Range. For a happy hour libation pre-show or as a nightcap, guests can head upstairs to Brohan’s, the rooftop cocktail lounge and bar with more sweeping views of the amphitheater and mountainous skyline.

Roth’s will also feature an immersive Chef’s Counter experience. The intimate, eight-seat experience will face an exhibition kitchen for a seven-course tasting menu paired with rare, world-class wines. Chef’s Counter menus will change dynamically with seasonal ingredients, and the live interaction between chef and guests will ensure a one-of-a-kind culinary journey.

Roth’s Sea and Steak is located at 95 Spectrum Loop. It will be open for dinner service Sunday through Thursday, extended until midnight on Fridays and Saturdays. Reservations will be available beginning 30 days prior to opening. Both complimentary and valet parking will be available.
