Ascent Brewery

Ascent Brewery brings European tradition and a military love story to Falcon with German, Belgian, British and Czech beer styles.

Falcon’s newest brewery is more than a place to grab a pint. It’s a labor of love that has been a decade in the making. Joe and Stephanie Prue are launching Ascent Brewery with a grand opening on May 24. The couple, who live in Falcon, tied the knot at their new brewery on April 16 during a soft opening with friends and family.

Both Joe and Stephanie retired from military careers in space operations, and the couple named the brewery in honor of their aerospace roots. They share a love for European beer, and after retiring in Germany, they decided to bring authentic, traditional brewing back home — complete with strict adherence to Reinheitsgebot, German beer purity law, and a focus on German, Belgian, British and Czech styles.

But they didn’t dive in immediately. Over the past four years, the Prues visited more than 400 breweries in their RV, stretching from Alaska to Maine. They spent time connecting with local brewers, learning the business and, of course, conducting plenty of tasting research.

The couple has now landed on a 13-acre homestead in Falcon. The couple spent a year cleaning up the land themselves before building the 2,700-square-foot Ascent Brewery, along with its spacious 2,900-square-foot patio designed for long afternoons and wide-open views. Future plans include a hop garden and a dedicated tasting room. For the grand opening, you can expect to see the following beer styles on tap, which Ascent has social posted about: helles, dunkel, hefeweizen, pilsner and English IPA.
