The new breakfast restaurant in downtown Colorado Springs features egg sandwiches, breakfast burritos and matcha.

There’s a new breakfast restaurant in downtown Colorado Springs. Egg Lush opened earlier this month in the Mill Street neighborhood. It can be easy to miss, but you might know the location as the former Urban Steam. 

The restaurant space has undergone a fresh renovation, bringing a bright, modern interior. And there were some stops and starts as the team did some early fine-tuning. Now they say they are open every day. 

The menu features about a dozen egg sandwich and breakfast burrito options with good variety. There are Eggs Benedict options as well.

The egg sandwiches are solid hand-held breakfasts, served on brioche buns. Most feature the House Spicy Mayo. Protein options include Bacon & Cheese, Ham & Cheese and Salisbury Steak. There’s also an Avocado Sandwich. 

The breakfast burrito menu is similar. The Classic Burrito features scrambled eggs and tater tots. There is also Bacon & Cheese, Salisbury Steak, Ham & Cheese, Avocado and a Vegan Burrito. 

Egg Lush has opened with a strong matcha game too, and their pretty drinks have been popping up on social media. Strawberry matchas feature strawberry cream on top or strawberry puree on the bottom. The Ube matcha latte adds a flavorful purple blend. 

As south downtown continues to pop with new apartments and more residents, Egg Lush seems well positioned for a tasty grab-and-go breakfast or a new spot to linger, especially on it’s west-facing patio.
