As part of their growing collection of local food and beverage concepts, Tim and Monse Hines are reimagining the former Saigon Café space in downtown Colorado Springs as the future home of Monse’s Pupuseria Downtown — an expansion of the favorite Old Colorado City restaurant and one of Springsmag’s 30 Best Restaurants.
Owners say the move isn’t about duplication — it’s about reaching a new audience with the same inviting energy and a few thoughtful upgrades. “We see downtown as a completely different audience,” Tim says. “We’re excited to bring Monse’s downtown with the same positive vibe for locals and tourists alike.”
The new location will feature Monse’s signature Salvadoran menu, including its well-loved pupusas along with rotating specials and a revamped brunch menu. “We always hope people enjoy the freshness of ingredients and unique flavors,” Tim says. “But we appreciate the number of supporters who recognize Monse’s effort to offer allergy-friendly, vegan and vegetarian options alongside traditional dishes.”
The renovated space will offer expanded indoor seating and the flexibility to host private events and large groups. Within a block of both private and city parking lots, the downtown location is also within easy walking distance of hotels, attractions and local businesses.
The Hineses also recently opened Best Coffee & Lounge in the former Wild Goose Meeting House on North Tejon Street. The concept is gaining traction, and a second version — Best Coffee & Lounge Express — will open soon inside the current Monse’s location in Old Colorado City.
Also underway from the restaurant group is a full renovation of another community favorite — Mountain Shadows Restaurant — projected to open by the end of 2025. Stay tuned for details.
