Rocky Bowl Bistro celebrated its grand opening on Dec. 9 on the east side of Colorado Springs, bringing a new Asian fusion restaurant to the Peterson Space Force Base area.
The local AAPI-owned restaurant serves breakfast and lunch Monday through Saturday, with dishes from Vietnamese, Thai, Korean and Japanese cuisines. Breakfast is served from 6:30 to 10:30 a.m., featuring unexpected dishes like a Mac and Cheese Roll and Patongko, a traditional Thai and Lao fried donut that reflects the owners’ cultural heritage.
The lunch menu expands on the fusion concept with an array of bowls and signature items like the Giant Chicken Sandwich and the UFO Burger – a playful nod to the nearby Space Force base. The prices at Rocky Bowl Bistro make the menu even more tempting with appetizers starting at $4.95, entrees ranging from $6 to $16, and specialty drinks like the iced matcha latte priced at $3.95.
