Rocky Mountain Beignets has opened a second location in downtown Colorado Springs, bringing a taste of New Orleans to the heart of the city. The original cafe opened in Manitou Springs in 2021 and quickly developed a loyal following for its fresh, made-to-order treats. The new shop is near the intersection of Kiowa and Tejon streets.
The downtown menu features the same signature beignets served warm and dusted with powdered sugar. Guests can customize their orders with toppings such as caramel, chocolate, blueberry or seasonal flavors. A variety of coffee drinks, including café au lait and hot chocolate, are also available, making Rocky Mountain Beignets a cozy spot for a morning treat or afternoon pick-me-up.
The Manitou Springs location has earned glowing reviews online for its authentic Louisiana treats. One Google reviewer noted, “The beignet bites are served warm, doughy, crispy outside yet soft inside. The sugar powder has just the perfect amount of sweetness to complement this dessert.” Another wrote, “My family is from New Orleans…. I was hesitant to try these. I shouldn’t have been! These are the best I’ve had outside of New Orleans.”
Owners Brandi and Billy Chism, originally from Baton Rouge, Louisiana, launched the business in 2019 as a food truck in Woodland Park. Their mission was to teach their children the ins and outs of entrepreneurship while sharing a beloved Southern staple. With the success of their Manitou Springs shop, the downtown opening marks a new chapter for the growing local brand.
