Something exciting is happening in the former food hall The Well in East Downtown. The space will soon open as Totem, serving international comfort food with Latin and Mexican inspiration, specialty coffee and craft cocktails made to bring people together.
The concept is an extension of Totem, a bakery and restaurant in Mazatlán, Mexico. It’s now crossing borders to share its signature flavor, warmth and soul through coffee, comfort food and craft mixology.
The restaurant’s Instagram says that its name, Tótem, is similar to the word coffee in the ways it resonates across many languages. Totems represent the origin of a community.
From its beginning in Mexico, Totem has been rooted in and inspired specialty coffee. That’s why its logos center on an owl, a symbol of wakefulness and of dreaming while wide awake. It’s new logo for Colorado Springs features an owl that incorporates the abstraction of a Chemex — the restaurant team’s favorite manual brew method. Beneath it, the antlers of a deer rise, adorned with coffee leaves and cherries. It’s a symbolic tribute to Totem’s roots, as Mazatlán means “land of deer.”
Along with specialty coffee, Totem will serve globally inspired comfort food and signature cocktails developed in-house. Its team of chefs will work collaboratively from both Colorado Springs and Mazatlán, promising “to bring bold, soulful dishes to life.”
Fresh baked goods will be created in-house daily by sister concept Bake Bake. Expect eveerything from sweet pastries and desserts to sourdough boules in different flavors. You’ll also find the likes of brioche rolls featured in decadent 3 Leches French Toast on the brunch menu.
