Wobbly Olive, known for its exceptional craft cocktails and commitment to fresh ingredients, has recently opened its second location in the Springs.
The move downtown grew out of a partnership between Wobbly’s owner Sean Fitzgerald and Chef Mark Henry. The two were already collaborating on Allusion Speakeasy, which was tucked away in the back of Henry’s Kelley’s Spiedie Shop and its previous concept, Rooster’s House of Ramen on N. Tejon Street. Henry recently closed the Spiedie Shop, making space for the new Wobbly Olive.
The new establishment promises to uphold the same level of friendly service offered at the Powers location. Beyond libations, Wobbly Olive’s menu showcases Colorado’s diversity with dishes made from local ingredients. Some favorites include the charcuterie and fromage appetizer, fried goat cheese small plate and shrimp and grits entree.
