Cafe Rio

Founded in 1997 in Salt Lake City, Cafe Rio was created by Steve and Patricia Stanley who wanted to bring the traditional cooking of Northern Mexico’s Rio Grande region, Southern Texas and New Mexico to the masses.

With a focus on fresh ingredients and made-to-order dishes like tacos, burritos, salads and enchiladas, Cafe Rio quickly became a popular destination for foodies. Today, there are more than 150 Cafe Rio locations across the country, with more set to open in the coming year as the company expands the restaurant’s presence in Colorado.

Among Cafe Rio’s expansion plans is a location to take over a former Steak-n-Shake in northern Colorado Springs, which will open sometime in 2024. No official date has been announced yet.
