While Rooster’s House of Ramen closed downtown, Chefs Chad and Mark Henry have reimagined a new concept in its place: Kelley’s Spiedie Shop.
The new restaurant, named after Chad and Mark Henry’s mother Kelley, is focused on Binghamton, New York’s regional specialty: the spiedie. It’s kind of like upstate New York BBQ. Chefs Mark and Chad have brought their small-town staple to downtown Colorado Springs alongside some of their other childhood favorites, such as potato salad, deviled eggs, New England-style baked beans and even birthday cake.
As for the signature Spiedies, guests can enjoy a range of styles, including pork, chicken, buffalo chicken, Italian beef, portobello and lamb. All Spiedies are served on a classic Italian roll and feature juicy, marinated meats and an herb marinade.
