What began in a family kitchen in Woodland Park in 2023 has blossomed into La Concha Bakery & Coffee, a vibrant celebration of Mexican heritage and artisanal baking. Co-founders Sandra Saavedra and Sebastian Romero, alongside Lead Baker Guillermo Ramirez and Lead Pastry Chef Adriana Ramirez, have crafted a menu that intertwines rich cultural traditions with familiar favorites.
La Concha officially opened its doors in January at the corner of East Cheyenne Mountain Boulevard and Highway 115 in southwest Colorado Springs.
The bakery takes its name from its signature offering — the concha. This traditional Mexican sweet bread features a distinctive seashell-patterned top and a tender, lightly sweetened base. Beyond the classic sugar or chocolate varieties, adventurous patrons might sample the Concha Rellena, generously filled with Nutella, fresh strawberries and cream.
Equally impressive is the Chocolate Mazorca, where crisp, cinnamon-infused pastry layers conceal a rich chocolate filling beneath a delicate sugar dusting. Pair with an Americano or cortado for the full effect.
La Concha bakery’s glass cases display an array of other temptations. Assorted pastries, cakes and desserts sit alongside hearty sandwiches built on house-baked bread. Early morning visitors can secure freshly baked sourdough loaves and baguettes, still warm from the oven.
