Jason Wallenta, owner of Dos Santos Tacos, and his wife Riley O’Brien will partner with Chef Batzaya “Zaya” Altbish to bring Colorado Springs Sushi Row, an elevated, elegant sushi concept. Chef Altbish is the former chef of Sushi Sasa in Denver where he created innovative dishes like bluefin tuna with a jalapeño pepper pureé.
The trio envisions the 2,200-square-foot downtown space as an upscale sushi destination unlike any other currently in Colorado Springs, with elegant walnut slab tables to serve on. Its downtown location will be in the former YMCA office building that is undergoing renovation.
Alongside offering authentic Japanese cuisine, Wallenta has plans to stock a full bar with a Japanese whisky selection, craft cocktails and a sake program.
