The home of the former Stir Coffee & Cocktails on North Tejon Street is getting a second life — this time as a raw fish bar. Restaurateur Joe Campana, a familiar name in Colorado Springs’ dining scene, is behind the new concept, which will focus on fresh, cold-prepared seafood like sashimi and ceviche, served in a sleek, minimalist space.
The location has a layered history. Before Stir, it housed a sushi bar — and it sits directly next to Campana’s well-known Bonny and Read seafood restaurant. With rising rent impacting his operating costs, Campana recently made a strategic move to buy the building that houses both spaces. The $2 million purchase gives him more control over the property and flexibility to invest in the kind of culinary experiences he’s known for.
While the raw bar will have its own vibe — more refined and upscale than Bonny and Read — it’s technically an expansion of the existing restaurant. The wall dividing the two spaces is being removed, and guests will enter the raw bar through Bonny and Read. “It’ll feel like its own elevated experience, but you’ll access it through Bonny,” Campana says. “Once it’s open, Bonny and Read will get a facelift too.”
Campana has long been a downtown creator, with a portfolio that includes The Rabbit Hole, SuperNova, Shame & Regret, Cork & Cask and Crooked Cue. He’s known not only for his inventive spaces but also for a deep commitment to creating community through hospitality. His venues often blend bold concepts with cozy, welcoming environments that feel distinctly local.
Campana says the concept should be ready between August and September. Expect a smaller, chef-focused layout that encourages diners to linger over clean, unfussy plates and thoughtful drink pairings. As always with Campana’s projects, the goal is simple: Give people a reason to gather downtown — and keep coming back.
