El Pollo Loco specializes in citrus-marinated chicken cooked over an open flame, served with tortillas, fresh salsas and sides like rice, beans and corn. In a landscape dominated by fried options — think Raising Cane’s and Slim Chickens — El Pollo Loco offers a grilled alternative that leans lighter but still satisfies. The menu stays straightforward: burritos, bowls, tacos and combo plates.
Colorado Springs will be the third city in the state to get an El Pollo Loco, following locations in Denver and Arvada. While the 50-year-old chain’s roots are in Southern California, it has been expanding steadily across the West with nearly 500 restaurants nationwide.
No official opening date has been announced, but once the grills fire up on Fillmore, the aroma of caramelized marinade is likely to draw curious locals and longtime fans.
