
Brad Fairman nestled himself between Austin Bluffs Parkway and Nevada Avenue to share family recipes out of the family run food truck Peak Empanadas.
The truck has only been around since Nov. 15, but it is already attracting people from across town, according to Fairman. The truck boasts a Cuban sandwich on a bun ordered from a bakery in Tampa Bay, Florida, brushed in a secret butter sauce and topped off with real Cuban mustard. And Fairman has a special place in his heart for the empanadas.
“We’re just really good at them,” he says. Each empanada is made by hand in the Peak Empanada food truck. Fairman says the seasoning on the beef is a family specialty, but that the real magic lies in homemade chimichurri sauce.
“They basically wanna buy it by the bottle,” Fairman says. “That’s our secret sauce.”
The truck started with the family empanada being a hit at parties and events and quickly blossomed into an entrepreneurial adventure.
Aside from providing quality food, Fairman says he has an emphasis on family and that he likes being able to teach his kids the basics of being an entrepreneur. On any given day, the food truck is full of Fairmans helping out.
It might not officially be in the recipe, but Fairman says that fun is baked into everything he does with the truck. The move from Florida to Colorado fulfilled a dream that has launched a business born out of enjoyment.
The truck has a discount for students and veterans and is open from Tuesday to Friday, 11 a.m. to 6 p.m.
Peak Empanada is usually parked at the corner of Austin Bluffs Parkway and Nevada Avenue.
