Jeff’s Bagel Run is preparing to open its first Colorado Springs location on the east side of the city. The 1,500-square-foot shop will open at Stetson Hills and Powers boulevards in a former Starbucks location. The bagel shop will mark the brand’s debut in the Springs and the first of two local shops currently in development, locally owned and operated by franchisee Dave Weinberg.
Weinberg and his wife moved to Colorado Springs in 2021 after spending time in the area with friends and family, drawn in part by the idea of living somewhere with snow. “We were looking for a place that felt like a good long-term fit,” he says. “Denver felt too crowded, and the Springs had the right balance for us. We kept coming back and realized this was where we wanted to be. I moved here for snow — it’s a bummer that we didn’t have a white Christmas this year.”
When it came time to choose a location for the first shop, Stetson Hills stood out for practical reasons tied to the concept. “The population density, visibility and the fact that the space includes a drive-through all made sense for the type of quick-service product we’re offering,” Weinberg says. “There aren’t many options like this in the area, and the space itself was a good opportunity.”
Founded in Florida, Jeff’s Bagel Run operates on a small-batch model, baking bagels fresh throughout each day. Everything is made from scratch, with no freezers used on site. The menu is intentionally limited and changes regularly, a structure designed to prioritize freshness and consistency rather than maintain a fixed lineup.
Customers can expect a mix of traditional bagels, including flavors like blueberry, cinnamon sugar and everything alongside spreads that mix classic flavors with playful surprises. Spreads include varieties such as cake batter, cannoli, banana pudding and hot sauce, with selections rotating daily. The shop will also feature a special bagel of the day.
In addition to bagels, the menu includes coffee and drinks such as hot and iced coffee, lattes, nitro cold brew and flavored lemonades. Beans will be sourced from Otus Coffee, with roasts tied to Colombia and Central America and available for purchase in-store. New menu items planned for January 2026 include infused energy drinks and a boxed sandwich option, served unassembled with turkey, garnishes such as lettuce and tomato, and condiments packaged separately. The method allows customers to assemble their own sandwich and keeps the focus on the bagel itself.
The shop is expected to be open daily from 6:30 a.m. to 2 p.m. and will hire approximately 20 full- and part-time employees. A second Jeff’s Bagel Run location is planned elsewhere in Colorado Springs, though details have not yet been announced.
