It has been another delicious year in Colorado Springs with new restaurants continuing to open on the regular. 2025 brought some big landmark openings that had been in the works for years and some unexpected surprises.
On the other end of the spectrum, let’s all pause for a moment to remember long-time favorites Trinity Brewing Company and Señor Manuel’s which closed their doors permanently this year. (The 55-year-old Señor Manuel’s made the announcement official this year after a 2024 fire severely damaged the property.) Both of those are big local losses, but fortunately, this year’s restaurant closure toll wasn’t as heavy as in 2024.
Instead, these additions just kept adding to the list of local hot spots — making it harder to keep up with trying all the new restaurants in Colorado Springs. We’ve narrowed down the list to some of our favorites and most popular new eateries. Pick your favorites, and add them to your dining bucket list for the new year. Bon appétit!
New Restaurants in Downtown Colorado Springs

The Brit Pub
Downtown added an appropriately warm and welcoming soccer bar and authentic British pub thanks to its majority-British group of owners. The menu is elevated. The taps are legit. Read our preview here. Cheers, mates!

Latin Social
The owners of Best Restaurant-listed Ambli Kitchen + Bar dropped an excellent new concept on North Tejon in the fall. Latin Social is a chic hot spot with an elevated menu inspired by the Mediterranean region. You can see our early preview here.
Masala Mingle
Downtown was lacking in Indian restaurant options, and Masala Mingle was a delicious remedy. It has quickly earned a strong following for its innovative Northern Indian cuisine. Here’s our preview.

Oro
As we said in May, The Mining Exchange Hotel struck gold early in the year with the opening of Oro. The rustic Italian-meets-Colorado inspired menu shines and quickly jumped onto our annual list of Best Restaurants.

Ryze Skyline Lounge
Craft cocktails and sharable bites beside the rooftop firepit with direct-line Pikes Peak views? Yes, please. The Hilton Garden Inn Colorado Springs Downtown waited till now to open this swanky rooftop bar. We’re glad they finally did.
Totem
Totem is a breath of fresh coastal air just right to revive the former downtown occupied by The Well. The restaurant is a stateside outpost of owners’ original restaurant in Mazatlan, Mexico, sharing signature flavors, warmth and soul. Read our pre-opening preview here.
707 Pizza Co.
The N. Tejon-facing restaurant space in CC’s Ed Robson Arena building finally got a tenant last summer. 707 Pizza Co. brought a Neapolitan pizzeria-wine bar and introduced the Springs to fully digital tabletops offering menus, games and more entertainment. Here’s our early preview.

The Penrose Room
The Broadmoor completed a long-awaited overhaul of its rooftop fine dining standard bearer. The result is an inviting gem, blending the iconic resort’s history with luxe modern vibes. Read our feature here and get your reso lined up.
New Restaurants in North Colorado Springs

Nana’s Dim Sum and Dumplings
The popular, small Denver-based chain moved to the Springs at Interquest last summer, making a big hit with its handmade dumplings, bao buns and modern Chinese menu. For authentic dim sum, this is the spot.
Prime25 North
The upscale steakhouse has been a standout in Ivywild since 2017. Its second location Prime25 North has been a hit in the former FO4North restaurant collection at Interquest.

Roth’s Sea and Steak
Executive Chef Ricky Biswas and owner J.W. Roth are unabashed about their goals and desires to set a new standard for fine dining in Colorado Springs and beyond. They have made an impressive debut, and you can read our preview feature here.
New Westside Restaurants

Base Camp
The Westside has always been closely tied to the mountains, naturally. So the addition of Base Camp Restaurant to Old Colorado City was a perfect pairing for its elevated Colorado comfort food.
