As Colorado Springs continues to grow northward, so does one of its most celebrated steakhouses.

Owners Chuck Schafer and Donnie Cannella say the expansion is more than a second location — it’s a natural evolution of the Prime 25 experience. “We believe Prime 25 has set the standard for exceptional food, service and experience,” Schafer says. “With Prime 25 North, we aim not only to match that reputation but to exceed it.”

The new space features an elevated, modern design and expanded private dining options, with two rooms that can accommodate groups of 24 or 40 for events, celebrations or business dinners. Guests can expect the signature Prime 25 menu, plus a few surprises: chef-driven specials and happy hour offerings unique to the new location.

Maintaining Prime 25’s high-touch service across both restaurants is a top priority. A seasoned team from the flagship location on South Tejon will lead training, with staff shadowing current team members to learn the brand’s hospitality approach from the inside out.

Prime 25 North aims to complement the growing culinary landscape on the city’s north end, and the steakhouse will fill the space of the former Manhattan Room adjacent to the FO4R North collection of restaurants.

“We’ve chosen the north end of town for a reason,” Schafer says. “It’s home to a vibrant, growing community that values high-quality dining and elevated service. We believe Prime 25 North will perfectly complement the area’s existing offerings while bringing something truly special and distinctive to the table.”

A job fair and open interviews are planned for Aug. 3–9, followed by staff training Aug. 10–23. The restaurant is expected to open for full service on Sept. 1.
